Just because the label says “mashed potatoes” doesn’t mean these dried flakes can’t do a lot more. Here, we’ve turned the ultimate convenience food into a hearty casserole that takes no more than 25 minutes to get to the table.
Ingredients
1 1/4 pound(s) ground beef
1 medium onion, chopped
1 can(s) (15-ounce) chili beans, drained
3/4 cup(s) barbecue sauce
Potato flakes
Directions
1. Preheat broiler. In broiler-safe 10-inch skillet, cook ground beef and onion on medium-high 8 minutes or until beef is no longer pink. Drain off liquid.
2. Stir in chili beans and barbecue sauce. Simmer on low 8 minutes or until reduced slightly.
3. Prepare potato flakes as label directs for 6 servings.
4. Spread potatoes on top of meat mixture. Place skillet in oven and broil 6 minutes or until potatoes brown. Serves 6.
